Chef Claudio Soto is offering guests this excellent meal selection during that week;
APPETIZER (choice of one):
- Ceviche - Fish and shrimp cooked with the juice of a freshly squeezed lime and
heated with tomato, onion, cilantro and chile serrano
- Sopa de Tortilla - Probably the most popular Mexican soup. It is a perfect combination of
chiles, tomato, epazote and tortilla. Served with or without chicken
- Sopes del Rancho - Hand made corn masa rounded into flat shallow cups and filled with refried beans,
chorizo, ground meat or chicken topped with tomato, lettuce, fresh cream and grated cheese
MAIN COURSE (choice of one):
- Mar Y Tierra - grilled and butterflied 1/4 pound jumbo shrimp smothered in garlic, tequila and lime accompanied
by a beef tenderloin medallion infused with serrano peppers over a tropical tamarind sauce
- Pescado al Mango - the fresh fish of the day, lightly breaded, grilled,
stuffed with guacamole, seductively paired with a mango and ginger sauce
- Cochinita Pibil - pork tenderloin marinated with mayan spices and a combination of peppers and citrus, cooked while wrapped in
banana leaves, shredded and served with fried plantains
- Chiles Rellenos - a pair of poblano peppers stuffed with cheese and topped with our traditional red sauce
DESSERT (choice of one):
- Pastel Imposible - chocolate layered moist cake, topped with a layer of caramel custard
- Flan - traditional caramel custard
- Tres Leches - vanilla sponge cake dipped in a 3 milk sauce
